Over the summer, the Dubai chocolate bar took New York (and TikTok) by storm. For $20, I said “I’ll pass.” But then I realized for about three ingredients and a fraction of the price I could make it myself – and with dark chocolate, which I MUCH prefer – and I very quickly opened my Amazon app to get to ordering.

The only thing you’ll need to go out of your way for is a silicone chocolate bar mold. But they only cost a couple dollars and there are a million options on Amazon. Melt the chocolate of your choice in the microwave (the original uses milk, I went with dark). You can add some coconut oil to it to keep it shiny but this isn’t necessary (I also think it makes the chocolate melt quickly later). Fill your mold with the chocolate, pouring out the excess so you have a little boat for your filling later. Stick in the fridge for 30 min to harden. Meanwhile, toast knafeh (aka strands of shredded phyllo dough) in a saucepan with some butter – this will only take about a minute) and then mix that with pistachio cream (think of this as pistachio Nutella) in whatever ratio you think looks good. Both pistachio cream and knafeh are easily found on Amazon too. Remove the half-made bars from the fridge and fill with the pistachio cream/knafeh mixture. Melt some more chocolate in the fridge and pour over the top of the bar mold (over the filling) to form the bottom of the bars. Stick back in the fridge to harden.

This is a positively stellar chocolate bar. And so so easy. It’s decadent so I actually prefer making my own where a can use a more bitter chocolate and the bar itself isn’t so massive. It’s rare I say I’ll be making a dessert or chocolate anything again, especially once the novelty has worn off, but I have a feeling this one will get a round 2.
